Damper

I don’t know who invented this recipe for a delicious type of Australian bread, but a friend gave it to me.

3 cups flour, 3 teaspoons baking powder, 1 tablespoon sugar, ½ teaspoon salt.

Sift dry ingredients into a bowl and make a well in the centre. Pour in ½ cup of cream and 1 cup of beer ordinary or non-alcoholic beer, and fold in with a knife. Add more beer if necessary.

Bake at 350 degrees F for approximately an hour. It’s done when tapping produces a hollow sound, or a thin-bladed knife comes out clean. Cool on wire rack.
